Takasago Shuzo Sake Brewery Ginga Shizuku Divine Droplets Junmai DaiginjoTakasago Shuzo Sake Brewery Ginga Shizuku Divine Droplets Junmai Daiginjo (15.6% alcohol by volume) is made with Yamada Nishiki Rice polished to 50% of its original size. As a junmai sake it is made with only rice koji, rice, yeast and water. There is no added alcohol or other ingredients. It is the only junmai daiginjo in the world made in an igloo-like ice dome kept at 28.5 F with 90% humidity and no wind. Floral and melon aromas dominate a prominent fragrance supported by some spice, a hint of fennel, light vegetal, traces of rice and a hint of cotton candy aromas. Melon lightly spiced with fennel leads the flavors and a trace of green vegetal flavor and a hint of marshmallow. There is a hard candy taste I remember from childhood that I cannot quite pin down. The flavor is semi-sweet, clean, fresh and mild with medium light acidity. This is a delightful, moderately complex, lightly earthy, elegant sake with a lingering tail. Drink this with Asian food, light fish or Humboldt fog Cheese. I rate Takasago Shuzo Sake Brewery Ginga Shizuku Divine Droplets Junmai Daiginjo 90.
