Sho Chiku Bai Premium Ginjo Sake
Takara Sake USA Sho Chiku Bai Premium Ginjo Sake (15% alcohol by volume) is a Junmai (pure rice) Ginjo (rice milled with no more that 60% of the rice remaining) sake. Sho Chiku Bai Premium Ginjo has a polishing ratio of 50%. It is Kosher Certified, sulfite free and gluten free. It is made with Calrose rice. The brewer recommends serving this cold and I am drinking this just a few minutes out of the fridge. This has a medium intense fragrance composed of fruit, pear, melon, cucumber and some cream and faint spice. The sake is brilliant pale water white with a hint of silver and plae staw from center to the rim. It has good reflectance and a clear, well developed meniscus. It has long, thin, well defined legs. the flavors are very delicate, smoth, clean and fresh featuring fruit, melon, berry and light, rice creaminess and a light, candy-like sweetness. The tail is moderate with a pleasant fruit flavor. The flavors lean to the dry side with medium acidity and a body leaning to medium plus. Fullness and umami are medium. Earthiness is low and the complexity is high. The alcohol is clean and smooth and helps bring out and enrichen the fruit flavors while the frruit flavors soften the alcohol. I am eating this with a sushi roll and they pair excellently but this has me wishing for a scallop. It will also pair well with light fish, light creamy cheeses and Kumamoto oysters. I rate this sake 86.
