Takara Sake USA Inc. Sho Chiku Bai Nama Sake (15.0% alcohol by volume) keeps its young and fresh flavors through micro-filtration rather than pasteurization by heat. Pasteurizations' high heat can change Sake's subtle flavors while micro-filtration leaves the Sake young and fresh. Sho Chiku Bai Nama Sake is Kosher Certified, sulfite free, and Gluten Free. This is a Junmai Sake with the rice polished to 60% of its original size. It is brewed with USDA certified organic Calrose rice. It has a mild spicy aroma with light melon and fruit aromas that grow as it warms. There are some cereal, baked muffins and trace vegetable aromas in the background. The aroma is medium plus. The sake is brilliant water clear with well defined long legs. The flavor intensity is medium high with some rice pudding flavored by melon, melon flower and cucumber supported by medium soft acidity, light umami and a delicate earthiness. It is off dry with just a hint of sweetness. The flavors linger moderately long. The complexity is medium and the body is medium high. The alcohol is very clean and smooth. I rate this very flavorful and drinkable sake 90. I am drinking it with Malpeque Oysters from Prince Edward Island and the sake and the oyster work very well together. Sho Chiku Bai Nama Sake also goes well with sushi, seafood, and washed rind cheeses.
