Wakatake Onikoroshi Junmai Ginjo Sake
Oomuraya Shuzo Wakatake Onikoroshi Junmai Ginjo Sake (16.0% alcohol by volume) is made from rice milled 40% with 60% remaining, koji mold, and yeast. Moderate aromas of melon and spice rise from the glass. It is brilliant water clear with a slight metallic gold tint, a clear well formed meniscus and good reflectance. A swirl of the glass creates tears that form long, thin legs. The taste is semi sweet with very smooth and clean anise spiced cantaloupe flavored alcohol balanced by a moderate acidity. It dries slightly towards the finish with a slight bitter note. It has a modest presence, a medium complexity and a moderate tail. It is beautiful to look at and rapturous to drink. I rate it 89.
