Kanabara Junmai Ginjo Bride of the Fox
Kaetsu Sake Brewery Kanabara Junmai Ginjo Bride of the Fox (16.5% alcohol by volume) is inspired by the Niigata Prefecture's annual Bride of the Fox festival. Junmai means it is a pure rice Sake brewed with only rice, water, yeast and koji with no added sugar or alcohol. It is brewed with Gohyakumangoku rice and has a 50% rice polishing rate and could technically qualify as a higher grqade Junmai Daiginjo Sake. The fragrance is medium high with traces of fennel to anise, a hint melon, a mild lily fragrance, faint traces of nuts, and soft rice notes. It has a brilliant silivery metallic look with light gold highlights. It has a clear, well developed meniscus, good reflectance and thick, long well formed legs. Lightly sweet melon and fruit lead the flavors lightly seasoned with anise and a trace of marshmallow. The impact is mild, the acidity is soft, the presence subtle, the complexity medium high, the earthiness low and the tail moderate. This sake is a fine companion to pork, poultry and fish dishes and also works very well by itself.
