Dassai Junmai Daiginjo 50 Sparkling Nigori Sake
Asahi-Suzo Dassai Junmai Daiginjo 50 Sparkling Nigori Sake (16.0% alcohol by volume) is a pure rice Sake (Junmai), with its rice milled down to 50% of the rice remaining and is a Nigori Sake - an unfiltered Sake with rice lees giving the Sake a cloudy look. It is also carbonated. Opening the bottle releases an initial tart acidic smell but in the glass rice and melon aromas come forward seasoned by light fennel and backed by llight marshmallow, a mild umami with some earthiness. Swirling the bottle resuppends the sediment producing a milky medium cloudy look with some fizz around the edges, long legs and fair reflectance. The Sake has complex fruit flavors with citrus up front followed by melon in the middle and fruit lightly seasoned by fennel on the finish which pleasantly lingers. There is a light grape note throughout and a trace of vegetable in the finish. Moderate acidity and the carbonation soften the sweetness. There is an almost minty, piny menthol aftertaste. The carbonation is moderate, pleasant and does not get in the way. This is a Sake you will return to often. Triy it with fried food or rich food like risoto. I rate it 95.
