X.R. Cyser Draft Style Mead
St. Ambrose Cellars X.R. Cyser Draft Style Mead (6.0% alcohol by volume) is a session mead made with apple juice, honey, maple syrup, cinnamon, tartaric acid, potassium metabisulfite and potassium sorbate. It smells like a fresh backed apple pie with cinnamon aromas leading closely followed by apple, maple syrup and honey. It pours brilliant pale gold with with a brief burst of effervescence that quickly reduces to a thin film. Moderate carbonation breaks up and softens a liquid apple pie flavor. Apple, cinnamon, honey and maple flavors are about even. It is semi-sweet well on its way to sweet and pulls back just short of too much. The body is medium light. The sweetness makes this a slow sipper rather than a session mead with the honey and maple coming across just a little too intense. A trace more tartness and tannins would make this easier to drink. I rate it 70.
