Mountain Dragon Mazery Black Cherry Blush Honey Cherry Wine Fermented With Tea (10.5% alcohol by volume) is a dry, still, standard melomel (fruit mead) brewed with pure black cherry juice, West Virginia wildflower honey, and a trace of green tea. Pulling the cork releases a very pleasant cherry aroma that fills the immediate area supported by honey and a trace of tea. Honey and cherry aromas are fairly evenly matched and do not smell artificial, raw or overpowering. It is brilliant copper gold with good reflectance and a well defined meniscus. the legs are light but lone and well defined. It is surprisingly dry - the aroma suggests a sweeter mead - and it starts with a pleasant cherry pie flavor including the pie crust, some nice honey flavors and a trace of nuts. You notice mild green tea flavors throughout and they become more apparent in the finish with a mild astringent note and a slight pucker from the tartness. The residual sweetness is low, the honey character is moderate, tartness is medium plus, tannins are medium and the alcohol flavors are medium. All the parts work very well together. This should work well with cheese and pork dishes. Mountain Dragon suggests replacing brazing stock with this mead for the ultimate au jus and roast beef - something I might try if I had the wealth of Jeff Bezos or Bill gates. I rate this mead 85.
