Apicoltura Dr. Pescia is a bee-keeping firm, founded in the Italian region of Tuscany in 1965. Apicoltura Dr. Pescia Nettare di Bacco Honeywine Idromele (14.8% alcohol by volume) is one of their several honey products. It is made with honey and water, fermented in steel vessels, and then aged in oak casks for at least a year. This mead is downright decadent. It stars off with rich honey aromas supported by dark fig, dried fruit, fruit, spice and a hint of vanilla. It looks like dark iced tea with a medium haze with fair reflectance and good, well formed legs. The flavors start like baklava in a glass with rich honey and spice, fig and vanilla. The oak tannins emerge on the finish and dry things out. It is full bodied with mild alcohol warming. The spiciness is beguiling - some of it definitely comes from the oak and some may come from the honey. The balance between the honey, the alcohol and the oak is a marvelous achievement. Try it with chocolate or Pecorino, Parmigiano or Grana Cheese. Drink it with some one special. I rate this 95.
