For a good chunk of human history people drank beer or wine instead of water with their meals. Before modern water treatment microorganisms, parasites, bacteria such as botulism, cholera, dysentery, typhoid fever, salmonella, and other unsavory bits contaminated many urban water supplies. Beer which is boiled during its production and wine based on grape juice were both safe.

Here I look at food and restaurants from the perspective of a beer drinker. I occasionally use wine - its great in risotto - but if I am eating I want a beer and I want one that goes with what I am eating. Too many restaurants still have the wine person - many of whom view beer with some disdain - in charge of picking their beer. It is a lot like having a vegetarian pick your steaks. On the other hand, many big corporate buyers go for the safe bet. Beer that will sell while not offending anyone.
