Seattle Cider Company 2016 Series Washington Heirloom Hard Cider (6.5% alcohol by volume) is made with Courtland, Newtown Pippins, and Winesap apples, combining tannic, tart and fragrant varieties. It has a mild apple aroma, slight citrus, traces of spice, clean fermentation aromas and no off aromas. It is brilliant straw permeated by strems of bubbles under a half inch white head that quickly dissipates leaving a ring of small bubbles around the rim. The layered apple flavors taste like more than one variety. Traces of initial sweetness lead to a crisp, mildly tart dry finish. The tannins leave a slight astringent note. The cider is clean and not rustic. It is well balanced, moderately complex and very drinkable. Try it with washed rind cheeses, egg dishes, or pork I rate it 80.
