Henry's Pippin Hard Cider
Left Foot Charley Henry's Pippin Hard Cider (6.5% alcohol by volume) is a lend of different fermentations made from 12 varieties of heirloom apples. The captures the aromas of a variety of apples, has clean fermentaion aromas and a light alcohol aroma. The cider is sparkling, producing a 1/2" white cap on the pour that quickly dissipates. As the carbonation settles down, the glass becomes brilliant shimmering gold. The cider is medium dry to off-dry with a medium plus apple tartness and a slightly astringent touch on the finish. Apple flavors are moderate and taste like a variety of fresh pressed apples and not like concentrate. The tartness, light tannins and he variety of apple flavors give the cider some depth. Right now I am drinking the cider with a plate of Alpine Bay Oysters. The cider cleanses the palate but the dryness does not bring out the oyster flavors as well as a sweeter cider might. This cider would pair nicely with ham, a nice sharp cheddar or a Humboldt Fog cheese. I rate it 77.
