Cidre Fermier Breton Bio (5.0% alcohol by volume) is a certified organic cider that uses Jean Renard and Marie Menard apples for body and color, Doux Moën and Cair d'Arie apples for balance and aroma, Beau de Chien and Douce Coetligné apples for sweetness and Judor and Locart Vert for acidity and bitterness. It has a big, rich, complex apple aroma - perceptable from over 2" away - with traces of spicy phenolics and a hint of smoke. The cider is bright golden amber sporting a brief 1/2" white cap that leaves a ring of small bubbles around the rim. The apple flavors are big, varied and layered with a mildly sweet layer balanced by and contrasting with a slightly tart layer and a bitter, tannin layer with a light astringent touch. It has a lingering dry apple tannin tail. There are traces of spicy phenolics and smoke in the background but no barnyard funk, salty or chalky flavors. This is an excellent full flavored cider that would pair nicely with seafood, a fresh green salad, a bowl of fruit, charcuterie, or a nice washed rind cheese. I rate it 85.
