Hawk Haus Cider

E. Z. Orchards Hawk Haus Cider (6.6% alcohol by volume) is made from a blend of heirloom Johnathan and Yarlington Mill apples. Johnathan appples are sweet with a touch of acid while Yarlington Mill apples provide a sweet to bittersweet flavor. With this blend of apples, this cider straddles English and American cider styles. The apple aromas are subtle but have depth and the ferment is clean and lacks funkiness. The cider is brilliant straw gold with streams of bubbles leisurely rising to the surface. The pour produces a 1/2" white cap that almost immediately dissipates. The cider is dry with a range of apple flavors and a hint of white wine character. The tartness and tannins are about even giving a cider that has medium acidity that is not harsh or biting coupled with a noticeable but not over powering tannic astringency and just a hint of bitterness. The body is medium light and the carbonation is medium but not quite to soda pop levels. This is a refreshing and very drinkable cider. I rate it 81.
