He has written two books on cheese and produced a television series on cheese. He offers a selection of special international cheeses for the American and Australian markets. Will Studd Le Conquerant Demi Pont L'eveque is a washed rind cheese made for Will Studd by the Graindorge family dairy using whole milk from the AOC region for Pont L'eveque. Removing the waxed paper releases an aromatic, sweaty, barnyard, creamy aroma but the flavor is much tamer than the smell. The cheese is semi-soft to soft with a fudgy, creamy, melt in your mouth texture and a creamy flavor lightly laced with nuts. I am drinking it with a Bee-Town Traditional Cotton Blossom Honey Mead and the honey flavors work very well with the cheese's creaminess. I rate the cheese and the pairing 85.
