Sartori Tennessee Whiskey Bellavitano Cheese
They got me with the "Tennessee Whiskey" in the name. Any cheese with a beer, wine or spirit in the name usually has something interesting going on. BellaVitano cheese is an Italian Farmstead cheese that is creamy on the tongue with a premium nutty Parmesan flavor with some light fruity notes. Age gives the cheese a crunch from the white lactic specs peppered throughout the paste. There are no eyes on one side and one eye on the other. The cheese is firm and will crumble a little when you break off a chunk. It is made in Wisconsin from pasteurized cow's milk and is pale yellow to beige. The rind is slightly darker than the paste. Sartori Tennessee Whiskey BellaVitano Cheese is washed in Tennessee Whiskey prior to aging giving the cheese a mild funk, some earthiness and a faint hint of whiskey. It smells like a blend of baby's breath, cream, nuts, a light funk and a hint of fruit. I am drinking Superstition Meadery Fauna, a traditional mead made with mesquite honey, with this cheese. The pairing highlights the earthiness and nuttiness of both the mead and the cheese and together they offer more spiciness. Both the cheese and the mead are wicked wonderful and I rate the pairing 90.
