Deer Creek the Rattle Snake
Deer Creek describes the Rattle Snake as a sweet and spicy cheddar infused with tequila and habenero peppers. The cheese is beige speckled with red habenero with no rind. It is firm like a cheddar and has a creamy smell with a dose of habenero vegetable and tequila. The habenero bite the tongue like a rattle snake and the heat makes the cheese hard to taste. It also wipes out any other flavors in the neighborhood. There is a bit of habenero flavor and a hint of tequila. behind the heat. I am drinking this with a Junkyard Brewing Spanish Laser Boots, a sangria inspired sour ale with orange puree and crushed Sangiovese and Zinfandel grapes. The coldness from the beer softens the impact on the tongue but on the whole the cheese is brutal while at the same time drawing you back for another taste. This cheese is not for the faint of heart. If you like really hot food, you will like this cheese immensely. I would have preferred a little less habenero so that I could have had a better chance of tasting the impact of the tequila. Try the cheese with tequila, mescal, margaritas, daiquiris, iced Sangria, or Mexican beer. I rate the cheese 70.
