Collier's Powerful Welsh Cheddar
Collier's Powerful Welsh Cheddar is made with pasteurized milk from local cows and aged up to 16 months. It is made with a microbial rennet so it is vegetarian. There is no rind. It is yellowish ivory around the edges and gets more ivory colored towards the center. There are a few small eyes - smaller than a peppercorn. It has a nutty, funky smell with some old cheesy sweat socks in the background. This is a strong, but delicious cheese. The flavors start mildly sharp, creamy, nutty, with some mushroom, meat and salt. There are some buttery notes and a dab of tanginess on the finish. The texture puts it over the top. It is a hard cheese, yet smooth, creamy, melt in your mouth, crumbly with crunchy little calcium lactate bits. The flavors are strong, rich and full but with its creamy butteriness, it is not as sharp as many big cheddars. This is a perfect IPA cheese and I am drinking It with Junkyard Member's bounce New England IPA. The beer's strong flavors go well with those of the cheese. The beer's citrus and fruit notes complement the cheese's nutty, meaty creaminess. This is probably one of the best cheddars I have had. I rate it 90 and the paring with the beer 85.
