Alemar Blue Earth American Brie
The Mankato, Minnesota's Alemar Cheese Company makes French inspired cheese from pasteurized milk from a nearby organic farm's grass fed cows. Alemar Blue Earth American Brie is made organic pasteurized grass fed cows milk, sea salt, cheese cultures and vegetarian rennet. The cheese is made in 2.2 lb. wheels to slow ripening time and develop flavors. This is a soft cheese. The crust is bloomy white and the paste next to the crust looks like vanilla pudding. the interior is ivory with a splattering of small pin prick eyes. The cheese has a mild funky smell that will evoke memories in anyone who has ever bottled fed an infant. The flavor is tamer than the aroma. The runny edge near the crust is mildly tart, buttery and earthy with a little bitter on the finish. The middle is drier but still melt in your mouth flavorful.
I am drinking the Alemar Blue Earth American Brie with a can of Fair State BBRR Roselle Hibiscus Sour with blueberries, blackberries, and raspberries. The Fair State is fizzy lemonade tart with a strong berry presence and adds a pleasant fruit note to the cheese while cleansing some of the butter notes off the palate letting more of the cheese's bitterness come through. the cheese brings out the beer's berry notes and softens the sourness. The pairing evokes a rich, sour berry cream pie. The cheese is flavorful and rustic and pairs very well with the beer. I rate the cheese 82 and the pairing 84.
