German born Ted Aschenbrandt is a professional griller and competes in the World Barbecue Association's championships. He has written six books (four in english and two in german) on sausage and smoking meat. The Perfect Sausage: Making and Preparing Homemade Sausage, Aschenbrandt focuses on bratwurst and gives the reader all the information needed to make, grill and prepare recipes with brats. He covers all the equipment you will need - meat grinders, sausage stuffers, food processors, casings and other tools. He covers each sausage making step from start to finish and then delves into how to grill sausage. He provides recies for 17 classic german brats and 12 recipes for more exotic brats. He finishes with 26 recipes for cooking with brats. The book is well illustrated with photographs showing various pieces of equipment and showing each step of each process. This book does not cover each kind of sausage in the world but it does give the novice a good place to start and also provides useful information for the more experienced sausage maker. Once you master the basic techniques that Aschenbrandt describes, all of the recipes are clearcut and easy to follow. It you want to learn how to make sausages, this is a good place to start.
