Novelist Annie Proulx teamed with Lew Nichols, the owner of the former Vershire Cidery. The book is directed at people who own their own orchard, grinder and press or who at least intend to grind and press their own apples for cider. It covers the basics and then some for getting the apples from the tree into the bottle as a finished cider. They cover the equipment the cider maker needs, the basic steps, the different variables involved and have a good section on how to evaluate cider, cider problems and how to resolve or prevent them. The authors provide a good discussion of cider apples, different kinds, and selecting apples for cider and have a good chapter on tending and caring for your orchard. If you have an apple grinder, cider press, or an apple tree or two and are thinking about making cider, this book is a good place to start. If you are a home brewer thinking about making cider from juice obtained from a commercial apple orchard, you will find this book interesting but it may not cover all the bases you need discussed
