Fair State Brewing Cooperative Keep the North ColdMy can of Fair State Brewing Cooperative Keep the North Cold (5.0% alcohol by volume, 20 International Bittering Units) was packaged 5 weeks ago. Cracking the can releases a nice shot of herbal, floral hops, some light grains, biscuit and traces of fruit aromas. The glass fills gold with a slight haze permeated by streams of rapidly rising bubbles under a 1" white, frothy blanket of foam with fair to good retention. Light fruit, light biscuit, and a light malty sweetness start the flavors lightly seasoned by stone fruit and citrus. Malt flavors ar mdium, hop bitterness is medium low and hop flavor is medium low. The medium bodied beer is creamy with medium carbonation. While nothing stands out and nothing is too assertive, this well balanced beer is easy to drink. I rate it 77.
