Wild Specialty Beer
Specialty beers are a broad group of beers that do not fit into the classical beer style categories. They typically involve transforming a classical style base beer through the use of additional or alternative ingredients, or using alternative processes. The Wild Specialty Beer Category includes Specialty Beers fermented with yeasts or bacteria other than traditional brewer's yeasts. In this style the brewer has free rein, can start with any style or blend of styles, ferment with or without standard yeast and use any wild yeast or bacteria. The brewer may add fruit and may age in barrels. The beer's statistics and character are pretty much open.
