Specialty Wood-Aged Beer
This style covers wood-aged beers with added alcohol from the previous use of the barrel. The character of the beer will vary with the base style, the alcohol previously stored in the barrel and the length of time the beer spends in the barrel. Brewers typically use fuller bodied, higher alcohol beers for aging in used barrels because they stand up better to the various flavors but any beer style may be used.
Entrée: Black bean mole chili, grilled meats, wild game
Cheese: Aged nutty cheeses, cave aged Gruyere
Dessert: Dark chocolate, German chocolate cake, anything with pecans, coconut, walnuts, almonds and hazelnuts
Drink these either with a beer glass appropriate to style or drink it from a snifter.
