Kölsch is fermented with ale yeast which produces subtle fruit flavors and then is lagered at cooler temperatures which smooths out and cleans up the flavors. The result is a very delicate clean and crisp beer with subtle flavors of fruit and hops joined by a restrained maltiness. A light hand with German Noble hops give the beer low to moderately high florsl, spicy or herbal notes. The alcohol by volume ranges from 4.8% to 5.3%, the International Bittering Units are from 18 to 28 and the color is straw to gold. The clarity is brilliant. The beer has a thin head with poor retention. Drink fresh. This beer is delicate and fades quickly.
